ready steady cook

I have a pot of delicious turkey stock1; I also have a cooked turkey leg.

Can anybody recommend a fabulous turkey-based soup besides the really obvious?


1The people who hosted the Thanksgiving potluck I went to with my housemate were going to throw away their turkey carcass. So I gladly took it off their hands.

*gibber* But-- but the whole point of roasting a turkey is to obtain a carcass! I am glad you rescued it.

I'm very fond of white chili with turkey-- sweat onions and garlic with green chiles, deglaze the pot with a bottle of beer, add white beans, turkey, and turkey stock. Simmer until the flavors are blended and top with whatever herbs you have-- basil is good, or cilantro. You can also add potatoes, or some sweet corn or hominy.
