I have a pot of delicious turkey stock¹; I also have a cooked turkey leg.

Can anybody recommend a fabulous turkey-based soup besides the really obvious?


¹The people who hosted the Thanksgiving potluck I went to with my housemate were going to throw away their turkey carcass. So I gladly took it off their hands.

It's not exactly soup but...congee?

And not soup at all, but a delicious turkey stock would make great risotto (or orzotto, same sort of thing with barley).

Mmm, risotto sounds good. I'm kind of craving soup, but in some ways risotto is almost a better use of homemade stock than a soup with tons of other things in it.

*gibber* But-- but the whole point of roasting a turkey is to obtain a carcass! I am glad you rescued it.

I'm very fond of white chili with turkey-- sweat onions and garlic with green chiles, deglaze the pot with a bottle of beer, add white beans, turkey, and turkey stock. Simmer until the flavors are blended and top with whatever herbs you have-- basil is good, or cilantro. You can also add potatoes, or some sweet corn or hominy.

Yum. That sounds great--I especially like the idea of using hominy, since I've been meaning to make posole for ages.
