Tonight for dinner I made Thai
chicken with basil, which turned out delicious despite a number of modifications: I only had regular Thai basil, not holy basil; I used a milder chile in deference to my housemate's taste; and I ran out of fish sauce (tragedy!) and had to supplement it with a little soy sauce. I'm planning to cook it again after my next trip to the wonderful internernational grocery in Albuquerque where I can get holy basil and more fish sauce.
I served the chicken with jasmine rice and
cucumber salad, which was also yummy despite my having to use 1 T of fish sauce and 1 of soy sauce instead of all fish sauce.
Basically this is a rec for the web site, which I've found very informative about Thai cooking.
