It's a bit of a tricky one because the answers change depending on which 'verse you're in (comicsverse I don't know well enough to discuss, but that still leaves me with two because XMFC and X1-3 are incompatible) and what stage of their lives you're talking about.
1. What they most commonly do during sex
After Charles is paralyzed, telepathy plays a pretty big role; it's just barely possible that Charles can still experience both erection and orgasm despite his injury, but not likely. I'm inclined to the theory that he doesn't get erections--those nerve pathways are cut--but can experience orgasm through the brain stimulation of a telepathic link with his partner. Charles feels whatever Erik is feeling, whether they're having oral sex (lots) or using toys (occasionally).
In the original movieverse, where in my head-canon Charles and Erik were a couple for decades, before Charles's injury they had pretty much all the varieties of vanilla sex. What they did at any given moment depended a lot on Erik's mood; Erik had to be in a particular emotional place (either feeling very trusting or needing to feel more trust) before he'd want Charles to fuck him, for example. I say "vanilla sex" because Erik does not do kinks that involve domination, pain, or physical restraint. He's tried--he and Charles have been monogamous a long time, and they do get the urge to spice things up--but he simply can't, it's an instant turn-off for him. Neither of them quite dares to ask for it or offer it. They have one argument in 10,000 variations, and it's about whether peace is an option. While they're together, Charles thinks they're proof that it is; after they split up, Erik thinks they're proof that it's not.
4. Who'd cope best if the other one died
In X1-3, they'd each survive without the other, although not all that brilliantly. Erik in X3 goes off the deep end after Charles dies; I think he loses himself in rage. Charles, if Erik died, would lose a lot of energy. He wouldn't give up, but everything would become five times harder than it used to be. He'd get old very suddenly.
If Charles had died from his injury in XMFC, Erik would've waged an absolutely merciless war against humans and gotten himself killed within weeks. If Erik had died somehow, Charles would've grieved a lot and then gone on to live basically the life he lived anyway, but diminished, muted. You remember the mutant in X3 who talks about organizing meetings and petitions in response to the "cure"? That would've been Charles.
5. The happiest plausible happily-ever-after I can think of for them
X1-3: Erik doesn't try to force Charles to kill all the humans in X2, because as much as Erik has suffered, he can recognize a stupid idea when he sees one. Thus everyone gets out of the complex faster as a result and Jean doesn't have to sacrifice her life. Later, having seen Stryker's work, Charles becomes much more amenable to Erik's views, and the X-Men and Brotherhood ally, with the X-Men as the political wing of the mutant movement and the Brotherhood as the armed wing (currently observing a truce but ready to reactive as needed). Mutant-rights legislation is forced through Congress, as well as equivalent resolutions in the UN. Erik's not really satisfied, but he's willing to wait and see and let the weird demographics and speed of evolution in the X-verse take its course towards mutant domination; Charles is pleased that he's able to keep the fighting in the political arena and minimize the amount of hate, both now and for the future when mutants are dominant. And they're got each other, however much they quarrel.
XMFC: Erik doesn't turn the missiles on the fleet, he just detonates them over the ocean to show what he could have done. It's not that he'd gone soft--absolutely not, no matter how much Charles goes around visibly patting himself on the back for curing Erik's anger--it's just that you might as well try threats first. Everything subsides into a kind of second cold war, with governments nervously watching the mutant population and various mutant self-protection groups, styled on the X-Men, springing up around the globe. It's Hank and Raven who start and run the school; Charles and Erik focus on political pressure, adult recruitment, and self-defense readiness. It's tense and exhausting but it's fun; Charles is secretly glad he didn't end up an academic geneticist. And he and Erik have each other, however much they quarrel.
lilacsigil asked about Scott/Logan. As before, I've only got enough knowledge to talk about the movieverse, not comics.

But Logan even in canon genuinely comes to care for Scott, and Scott could've come to care for Logan if he'd had more time; they're not just one another's Jean substitute.
Sexually I think Logan is the "dominant" one in the sense that he tends to get his way, but getting his way could easily mean Scott tying him down, gagging him, and fucking him hard and fast. They try a lot of things, sexually; Logan has basically no inhibitions and Scott's willing to let Logan have whatever he fancies about 95% of the time. One thing they only tried once was a threesome with a woman; no amount of fantasizing could turn her into Jean, and they both felt let-down afterwards.

Scott, sorry. Scott occasionally tells Logan that hair is not meant to be architecture.
3. What they argue about most often
They bicker about everything, but real arguments mostly have to do with Scott's guilt (both Jean-related and general) and Logan's denial, to himself and others, that he has guilt too.

Logan's a survivor. He'd grieve hard, but he's capable of putting pain away, or at least shoving it to the back of his mind and mostly not thinking about it. If Scott lost Logan, especially if it was within a few years of Jean dying, he might not make it. Scott needs to be part of a couple.
5. The happiest plausible happily-ever-after I can think of for them
Well, the happiest is that Jean doesn't die and the three of them work things out. If we're talking about just the two of them: Scott, on Xavier's advice, stays the hell away from Alkali Lake and eventually Jean's voice in his head fades away. Jean doesn't resurrect, Xavier isn't killed, and thus the X-Men work with the Brotherhood to stop the cure without, you know, killing thousands of people. Sometime in the midst of this, Scott and Logan have sex for the first time, then Scott mopes guiltily for months before it happens again. But Logan already means too much to him, and he's lonely, and he envies the way Charles and Erik seem to have found some happiness together again. (Hey, as long as I'm writing a happily-ever-after . . .) One night he finds he just can't stop himself from going to Logan's room. He suspects that Charles might have given him a little push in that direction, but he's willing to forgive.
