The sort-of pavlova. Taken on my phone, in bad light, so please be forgiving!







That's a meringue/pavlova shell topped with a mixture of lemon curd and whipped cream, topped with raspberries, topped with more whipped cream. I whipped the smallest quantity of cream that seemed feasible, and I still feel like I've eaten a week's worth. (There are worse fates.)


ETA: AAAAARGH, huge image, trying to fix that now.

ETA2: Okay, I've made it much smaller, though also blurrier.

The toasted sugar has given it a really nice colour!

In real life it's a bit less golden and a bit more . . . tan. I do like the aesthetic of the normal, pure white pavlova, but the caramel flavor that comes from the toasted sugar is fantastic.

Our national dessert! Raspberries are especially delicious with it.

Raspberries are my favorite in anything. Well, good strawberries give them a run for their money, but good strawberries are hard to fine, while most raspberries are at least pretty good.

I love things with a crunchy and a creamy texture in one go.

Yeah, I'd never quite seen the point of meringues before, but they do have this great crisp-but-melting texture.
