Beet greens taste a lot like chard--the two are closely related. Beet greens are a little coarser and stronger, maybe, since the plants are bred for their roots rather than their leaves, but I think they're very tasty. That's why I always try to buy beets with the greens still on, if I can, because then I get two foods for the price of one!
