The novels aren't canon, but Diane Duane wrote about Spock's conception from Amanda and Sarek's point of view in Spock's World. She described them working with scientists to make it possible. Then, Enterprise followed that canon in S4, making it pretty clear that the two species can't accidentally conceive.
I very much prefer Diane Duane's world building for Vulcan than the way the Trek franchise eventually went - if you haven't read Spock's World and her Romulan novels, I can't recommend them highly enough.
